The girls were invited to a cookie party tomorrow afternoon, which means we needed to bake some cookies today!
I enjoy baking and sometimes I enjoy trying fancy and/or complicated recipes. But around this time of year, I’m usually looking to minimize complications! So today I picked two new-to-me but still really simple recipes.
Saltine Toffee Cookies (aka Christmas Crack)
I’ve had this stuff before and I love it, but I’d never made it myself until now. (It’s cooling in the fridge at the moment.) Only 5 ingredients and takes about 20 minutes! This could be dangerous. Might have to make some more with mini m&ms or sprinkles on top instead of nuts.
Softbatch No-Roll Holiday Sprinkles Cookies
I found this one after googling “easy Christmas cookies” and knew the girls would like the sprinkles. I made the dough this evening but it recommends chilling for at least 3 hours, so we’ll bake them tomorrow morning. The dough tasted good, so I’m sure the cookies will be as well!
And finally, a bonus photo of Charlotte with the dessert she invented tonight — an Oreo ice cream cone filled with peppermint whipped cream and topped with m&ms. She’s creative, that one!
p.s. I’m doing a 31 day blogging challenge.

I’ll take one of those Oreo ice cream desserts, please!
