Our hibiscus started blooming! It’s quite pretty. It would be prettier still if I actually got around to pulling all the weeds that insist on growing around it.
I had a nice relaxing weekend. I’ve already forgotten what I did on Friday, so it must not have been anything too exciting. On Saturday morning, I dragged Jose out of bed bright and early to walk the Yuri’s Night 5K with me. It was a great morning for a walk and we finished in just under an hour. Speed walkers, we are not.
After a yummy barbeque lunch with Jason and Becca, who were on their way to fix yet another part of their airplane, I dragged Jose to the mall so I could check out the Motherhood Maternity store. I found a pair of shorts and 2 pairs of capris. Hooray! Just in time for vacation! Which is in less than 2 weeks! Not that I’m counting.
We had a lovely Easter dinner with friends at John and Kelly’s last night. I made two Pinterest finds — asparagus, goat cheese and lemon pasta and key lime cupcakes. I did have to change the pasta recipe from goat cheese to feta though, since I didn’t think ahead enough to realize that Easter meant stores would be closed. Both HEB and Target were ghost towns when I went out to get ingredients yesterday, so my only choice was Walmart, where there was no goat cheese to be found. I liked the dish with feta, but I bet it would be even better with goat cheese because it would be a lot creamier. Next time!
Becca’s having an Easter dinner tonight so I’m trying one more Pinterest recipe — blueberries and cream pie. Remind me to tell you about how I dropped a entire container of blueberries at Walmart and when it hit the bottom of the cart, it popped open and spilled blueberries ALL over the floor. It was pretty awesome.
