Two days, two posts about yummy desserts! I could get used to this. Desserts are seriously my favorite thing to cook; even when I was in college and shortly after when I rarely cooked true meals, I enjoyed making desserts. The only problem is that I don’t have enough people in my house to eat them all. If you are reading this, you are invited over to my house for raspberry cream pie. See, on Saturday, I made the lemon raspberry bars I posted about yesterday. I bought way more raspberries than I actually needed because I misread the recipe, so on Sunday as I was snacking on a few of the leftovers, I tweeted the above. And then on Monday, I see this recipe for raspberry cream pie pop up in my feed reader. I promise that I do make recipes from sources OTHER than Pioneer Woman, but hey — it was a sign! So on Monday night, I randomly made raspberry cream pie!
Just like the lemon raspberry bars, you must first make a crust. This crust happens to be made almost entirely of Oreo cookies! Yum. Like you may remember from yesterday, I do not have a food processor. I thought Oreos would be difficult — not to mention messy — to crush by hand, so I decided to try the blender.
As you can see, the blender did a great job, although I had to do the Oreos in small batches. Add a little butter, mash it into the pie pan, put it in the oven for a few minutes and voila! Pie crust! This one is just as easy as graham cracker crust.
I mashed up a bunch of raspberries and added sugar to them. I actually added some more mashed raspberries after I took this photo because it didn’t look like enough. I probably could’ve just eaten this sweet raspberry mush, but I refrained.
So then of course everything gets mixed together. The pink stuff in the photo on the above left is raspberry yogurt. (Seriously, there is NO SHORTAGE of raspberry in this pie. If you don’t like raspberries…this is not the pie for you. If you only like raspberries a little bit…this is still not the pie for you. You’ve got to really love yourself some raspberries, people.) The white stuff is vanilla pudding mix, and as a side note, the combination of yogurt and vanilla pudding mix turns a little orange. I cannot explain this, and found it very strange. Add cream and the mushed raspberries, and the filling is done. It gets spooned onto the crust, and the whole thing goes into the freezer for a while.
I did a couple things in attempt to make this slightly less horrible for you. Since I figured there would be plenty of sweetness and richness with the combination of fresh raspberries, sugar, cream, and butter, I shaved a few calories by using reduced fat Oreos, sugar-free vanilla pudding, and low-fat yogurt. I know this pie still has about 5000 calories in it, but hey, I tried.
After dinner on Monday, I ate a piece. I only had one piece…on Monday. But last night I had another. And tonight? More raspberry cream pie. Seriously, someone needs to come to my house and help me eat this thing. Caution: must like raspberries!
