Because it is the only way to determine the gender of certain species. You send a feather and $20 to a company and they e-mail you the results.

Conures don’t reach sexual maturity until 3 years of age – and when they do, taking the eggs away typically only upsets them for a few hours (thankfully, birds have short memories 🙂
